Strawberry Parfait

Welcome back to Recipe of the Month everyone! This February, I’ll be giving you the recipe for a delicate, fruity, and refreshing treat. Strawberry Parfait is a simple, yet elegant, dessert that I’m sure you’ll love. My version is quite quick, requires no baking, and is perfect for anyone craving something sweet (in honour of Valentine's Day!)

Ingredients (Serves 2-3)
- 1 ½ cups fresh strawberries, sliced
- 2 tbsp granulated sugar (you can adjust to taste!)
- 1 tsp lemon juice (optional, for extra freshness)
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
- ½ cup granola or crushed biscuits (graham crackers or shortbread work well!)
- Fresh mint leaves (optional, for garnish)

Instructions
1. Prepare Strawberries: Wash and dry your strawberries, then slice them in halves until you have small cubes in front of you. Next, use a bowl to toss them with the granulated sugar and lemon juice. Let it sit for 10-15 minutes to enhance the flavour. 
2. Make Whipped Cream: In a mixing bowl, using a whisk or electric mixers, whip the heavy cream, powdered sugar, and vanilla extract. You’re going to want to do this until soft peaks form! Be careful not to overwhip—it should be light and fluffy.
3. Assemble The Parfaits: To assemble, you can use anything you want. I recommend regular serving glasses, but cups, mason jars, or even ramekins will do. Strawberry Parfait is all about layers, so you want to start with your granola or crushed biscuits. Then, add a spoonful of your sweetened strawberries, and a dollop of your whipped cream on top. Repeat this until your glass is full, and end with a generous amount of whipped cream. 
4. Garnish & Serve: From there, you could garnish however you’d like! I usually like to top my parfait with some fresh strawberries, a sprinkle of granola, and mint. Sometimes, I’ll even put on a drizzle of honey.
